According to the game coding the maid is not supposed to work at weekends. If you call for a maid on a Saturday or Sunday they should arrive first thing on Monday.
I have experienced this bug in my own game though.
I had a Sim throw a party and decided to call a maid to clean up. This was on a Sunday. I was notified that the maid would arrive at 10am on Monday. I got my Sim to travel to a community lot and upon his return home I was notified that the maid had been while I was away and payment was then taken. This was still on the Sunday.

I have never seen the maid on my lot even when I have recurring maid service. I will get the message that they came but often times there are still dirty dishes laying around afterwards. I hate cleaning up after big party, it takes hours to do. The maids should come immediately on any day of the week. They are NPCs so what else do they have to do. I miss having a live in butler or Bonehilda to do all of my cleaning.
If EA plans to improve on the services in the future I would like to see the live in butler return as well as the maid service show up within an hour or less. I also want to see the maid on the lot cleaning and not be a phantom. I would also like to be able to tell maids what to do (and the butler if they ever come back). It would be great to have the option to tell the service NPC to do specific things like tend the garden or repair objects, or do upgrades, etc. The service options in TS4 are lacking. Also gardening takes so long it would be nice to have a gardener so I can actually have a garden and do some other things at the same time. Right now I am a slave to my garden.
There are a couple mods that allow you to call an NPC gardener and repair man. I will have to try those out.
