It may have been some resolution/settings issue. I ended up deleting (well, renaming) the PROFSAVE file in the documents/Battlefield 1/settings folder, which forced the game to create a new one when I restarted, and it works fine from there. Not sure how the settings got corrupted, because I was able to play the game prior to the issue with no problems.
Anyway, tip for anyone who has this issue in the future: Delete/rename your PROFSAVE file and let the game create a new one for you!
