Hey @zabijak351,

If you stay within the same console family (Upgrade from Xbox One S to Xbox Series S|X) your Ultimate Team™ progress will be saved, and you won't have to start all over again. 
Only if you decide to switch the platform (e.g. Upgrade from Xbox One S to PlayStation 5) you would need to start from 0. 

For your example you would be able to keep all your progress 👍
