I agree there aren't enough options for Femshep. I believe they intended Jack to be an option in ME2, but that the idea was scrapped because they feared backlash from Fox News. I think this is an excuse. BioWare tried to be inclusive at times, but wasn't quite there yet.
EDIT: To be clear, I think there aren't enough options for male Shepard either.

Those lines were recorded as a safety net, just to make sure they didn't accidentally skip something. That's why male Shepard refers to himself as a woman at one point. It's not cut content, because it was never intended to be included.
