I think it's the latter. Considering I can't find any signs that VK stands for anything (Especially since the gun is manufactured by Wonyeon Defense, which has neither a V nor a K in it), and judging by the general look of the gun, I think it's most likely a reference. Don't take this as an official source though, I'm just as curious as you.

I'd love for a Titanfall/Apex Legends lore master to prove me wrong. I have a soft spot for the universe.

    Seen it discussed on one of those "weapon experts react" type videos.  Best guess does seem to be as ref to AK-47.  It's loosely based on the AK's design but with a bullpup type magazine.
