I think it's a mistake too and would prefer it to be off by default, but I expected it due to the beta. However, I do like the confirmation that turning it off still allows Xbox and PlayStation to matchmake together still.
Edit: On second reading of that quote, it's possibly a bit ambiguous about if the system still allows console crossplay.
From the Article
Nickerson said crossplay will be on by default when a player loads into Battlefield 6 for the first time, something players should know if they’re especially worried about encountering cheaters on PC. Console users who turn off crossplay will limit their pools to the PlayStation and Xbox communities, but Ripple Effect is hoping it won’t come to that.
My opinion.
I don't think that disabling crossplay on consoles means that they still get to play between consoles (console crossplay only). I think they're stating that turning it off means it's off, and Xbox plays with Xbox, and Playstation plays with Playstation.

It does however seem like if a user on console disables crossplay, it's not actually off, but just means console only crossplay. So if a Xbox user disables crossplay, they will still play against Playstation user's.

So I read more about on reddit, https://www.reddit.com/r/Battlefield/comments/1nf7v6v/per_ign_interview_bf6_does_actually_have_console/
