A lot to unpack here. Firstly, I just want to thank you for not only trying to help throughout all of this but also for taking the time to write up and clarify what some sections of the EA Forums are and what some of the settings are intended for.
With that being said, and I just want to make this clear and say that this isn't any fault of your own, I still remain a bit confused on what settings I should even enable. Ideally I'd like to be notified (via Email) whenever there is a new Blog post for any given game (Apex Legends, Battlefield, Skate, etc), as well as any replies to my own posts, and currently I am not sure what settings I should enable for this. For instance, I have not been notified about your replies on this post, which is a post I created myself. Now, as of this moment I do have the "New replies are added to a topic" and "New threaded replies are added to a topic" set to "Never", which I know are settings that will notify me about new replies, however I have decided to basically turn them off because in the past I have been notified about new replies that are added to EVERY topic I have commented on in my time on the EA Forums rather than just new replies that are added ONLY to my topics.
Also, like I have said, I'd like to be notified (via Email) whenever there is a new Blog post for any given game. Let's take the Apex Legends Game Info Hub for example (Apex Legends Game Info Hub); I am following it. I am also following the "Announcement" and "Patch Notes" tags, and yet no emails show up in my inbox pertaining to new Blog posts. Now, I do have the "New content is posted using a tag I follow" setting enabled and set to "Immediately", however no emails show up in my inbox pertaining to new Blog posts.
Like I said earlier, I feel like some of these settings are very vague and don't tell what they do, and also I feel like some of them are broken and don't do what they're supposed to do. Maybe it's just me not fully understanding what each setting is intended for, Idk.

For the tags, from my testing this is broken right now and we've started an investigation, so thanks for flagging.
For the blogs, your best bet would be to go to the games you're interested in, and manually follow each one from the blog page.
I did some poking around and I believe in your case the blocker was the Advanced setting about only getting notified on new discussions and not replies.
I took the liberty of turning this on momentarily so you'll get notified for this reply, but then you can choose whether to turn it back on. You might have received a double notification too, please disregard that as I was checking another quirk I noticed. That setting seems to "default" back to "new topics", I'll look into it.

Unfortunately, I think this may be another area that's broken. I'm following a few blog pages and I'm not being notified (via Email) whenever a new blog is posted. A recent blog for The Sims was just posted on The Sims Game Info Hub and I wasn't notified about it.
