Bring back ability to adjust difficulty once session has been loaded

2 years without that handy little loading screen menu has been a massive pain. Having to exit the game, switch off cloud saves, swap save files and reload. It's been agony, completely screws up what ...

If I remember correctly, this feature was missing since F1 2021 for whatever reason. It was incredibly convenient to have it on F1 2020 because Ai difficulty was as issue even from back then, but because this option exists it wasn't that much of a deal, we could just simply jump off - tweak - restart.
