I know exactly what you mean. I also find the steering is over responsive when making little corrections, which then means you over correct the over responsive correction. It just becomes a weeving mess.
I haven't quite found the sweet spot as of yet, but what I did was go into the controller settings. Then calibrated the steering sensitivity, I also adjusted the steering linearity and throttle linearity. I'll share a link of a YouTube video which explains it a whole lot better below, hope it helps! I believe it does, especially the sensitivity setting. It's just fine tuning it to your liking.
