This may just be my personal opinion, but I felt like the AI was slightly tweaked on some circuits. This may not be true, or it could simply be my own skill level improving. I was a bit tight against the AI in Miami, Imola, Spain, and Brazil. At other circuits, I could easily win. Belgium, Azerbaijan, Las Vegas, and Australia were easy for me. However, after 1.11, I was able to win Miami by about 10 seconds.
I noticed something similar. I use full TC and Brake assists with auto gears so really I don’t get better one I find the racing line. I have had to raise the AI by 5 at most circuits. I thought it was the MyTeam car so went to GP mode to compare against Verstappen in a RedBull and found I was did need to raise the AI for him to compete.

That's interesting, have to say the AI was so imbalanced from the limited running I've done in F125 (mainly waiting for the wet weather debacle to be resolved). Some tracks the AI were outrageously overpowered and others way too slow.
Sounds to me like they have addressed some of those imbalances, hopefully in preparation for the upcoming patch for the wet weather fix and ridiculous traction/punch out of the corners that the AI have.

The imbalances are still there, Australia requires an AI 5 lower than say Japan but I had to raise the AI at each track by 5 to get the same competitive racing as before.
Spain is still a track where the AI qualifies faster than it races so not much changed there.
