Evolved players will have the stats from before and after combined in my experience. If you want it to be separated, I'd just suggest writing down where he is at now statistically, then you'll always be able to deduct that number from goals and assists to find how many he gets after.
Also, if you purchased this item from the market, then don't worry. The stats are separated into 'other clubs' and 'current club' which is yours.
