I am having the same problem. I also cannot edit the thighs, calves and rear on most of the players already in the game. In the draft class editors the only things that change are gut and chest. All others stay the same no matter how much you adjust the slider.
Another thing I noticed is that there is no difference between a player that weighs 160lbs and 200lbs with the same physique settings.
