Go around the side and cut in, wrist it short side.
If you are super close just go forehand and roof it at the last possible second.

Practice gliding before picking your shots. It helps a lot. If you find you don’t have enough time to settle and glide prior to being caught by a defender try looking for a pass and find an open piece of ice that gives you needed space.
Quick passing plays really open up the goalie too. Like more than one pass to get them over committing. Same thing with lookin to shoot and getting the goalie to commit, but then making a quick cross ice or back door pass for a one timer.
