I am having the SAME problem - you customize your player and name the player (Whatever) - last name does not appear in online play (Drop in Games) - the player you choose to be (RW, LW, C...Ect) Displays a Different random name other than the one you customized.
Why is this?
Have no idea also other players profile such as there skin color, facial features, etc. are not correct. Really wish someone would have a solution to this problem. I had looked this up while playing NHL 13 and people had stated this happened to them in every NHL.
