I never had any flying zombies when I played yesterday.
And what lineup of plants are people using to accomplish this?

I’m impressed. That would have beaten me and my high level plants a few times.
My highest so far was 3.4mil with potato mine. But a few rounds I was well below 2.6mil.

Reinforce-mint knocks back Zombies
Using Blover requires proper timing when placing a knock back plant first like Chard Guard, Primal Peashooter, Spring Bean, or level 5 Stalia and then planting Blover. I think the attacking force of Spring Bean + Blover combo was removed a long time ago, has it been reinstated in recent update?
I don't know if it's been reinstated but if you have any practices left you could try plantfooding it as a reinforcemint substitute.
