To ride on a mount, you have to either call it from the mount window by pressing P for abilities window. In that window on the left is a list and one of the options is "Vehicles". Click on that will give you a list of all mounts you collected.
You can either click on the mount you want from there or you can left click and hold and drag the icon to your quick bar and then all you need to do is click on the quickbar icon to summon and de-summon your mount.
For your companions, you would press the N on your keyboard to pull up the Companions and Contacts screen. To the right of each and every companion is an icon you can click on to summon that specific companion.
I've attached screen shots for both. Also you can find a list of all your keybindings by pressing ESC to pull up a menu and then click on "Preferences" and then at the bottom click on "Key Bindings". Here you can see all your key bindings and make any changes or reset to Default.
