I don't know what not having a guild has to do with it. As for datacrons, I did once encounter a bug where I could not view my opponent's datacrons even though they had them: https://answers.ea.com/t5/Bug-Reports/GAC-opponent-has-phantom-datacrons/m-p/11843565/highlight/true#M61123

Your opponent seems to have used a Dashacron in the past which shouldn't have expired yet, so maybe you are encountering the same bug with them having zero.

But as DarjeloSalas said, Rey is perfectly beatable with Starkiller. If you are setting JML with Wat under Bastila, that is beatable by CLS in 5v5. Their history doesn't seem fishy. It's possible they are simply a better player than you.
