Most of these toons already exist, we just have no way of playing them. I also think keeping the character would be best.

It's a neat idea and generally I'm all for personalization, but it would be the first instance of truly irrevocable choices that can potentially hinder progress. People tend not to like that in games where they actively spend a lot of money.
They could make the specialization reversible, for a price of course, but that could make sure everyone has a chance to use the best toons.

Shard shop would need a simple change so you could select what shards you want converted.
