So far I've faced Bastila led jedi teams with my EP's nightmare team 9 times and have beaten that team all 9 times. Sion removing all their buffs is a big part of it, so is being able to fracture Yoda. It takes a little longer than other teams do, but you can wear them down, it just takes time. The first couple times I'm not sure if bastila was zeta'd, but at least the last 6 or 7 times I looked and saw she had it. Pretty much every time Sion has a turn, if they are resisting pain then he gets it cooldown for his next turn to clear all their buffs.
Another thing is if they do something silly like add a non-jedi to the team. If they do, that's the target and that target goes down quickly. (Mostly I've seen CLS)
I haven't faced a 7* Bastila yet, but 3 and 4 stars mostly and one 5* Bastila. With her being less than 7* those teams are only about 10K less power than my arena team. So, I'd be curious how I'd do against a 7* Bastila lead, just haven't seen one I can take on yet.
It's not the stars that seem to make a difference as much as the speed mods. I'm willing to bet the gmy is relatively slow if you get a 100% win rate. My ep nightmare team also has good luck against bastilla lead if gmy is only modded to +100 or less. But the ones modded to +120 are a much lower win rate. My team is modded to probably +115 on average.
