I am doing this with my house as well. I stopped at 3 bedrooms and two baths, and the rest is going into a construction fund. I'm working on building a mega mansion worthy of the rock star legacy I am creating (family trait is virtuoso). The old house will be demolished and some point and turned into a pool house or a big garage or something eventually.
Yesterday I went ahead and tore down my old (original) house. My heir came home with her new baby girl and I realized I had no room for another crib anywhere in the house. Rather than just tack on a new little room or something, I decided I had enough funds (about 75,000) to build a decent house. I only had the time to get the exterior just right before bed last night, so today I'm going to work on decorating the inside. I might upload it to the exchange at that point, but for now there are a couple screenshots of it on my blog (see sig).
