Low Sim Quality despite running at ultra settings

All sims in my game look really low-res for some reason despite having the sim setting set to very high. I even edited their rendering map size from 2048 to 4096 to see if it would fix it but it doesn't seem to help. I also removed all my mods and CC to see if it was the culprit but the issue still persisted.

@RoaringHeights This might simply be a limitation of the game itself. If you'd like though, please try a premade sim (still with no custom content present), let me know who you've chosen, post a few screenshots, and I'll check them out on my own Mac.
