It's working now that I have installed university life!!! Thank you! Would you please be able to explain the Ambitions process I didn't quite understand everything, please just try dumb it down a little extra!
@jacindaham I'm glad to hear that University Life is working. That means you're past the biggest hurdle.
For Ambitions, there are two issues that need to be addressed. The first is that the Ambitions alias (shortcut) doesn't get created when it's installed. If you open Applications\The Sims 3, right now you'll see a green plumbob icon for the base game, an uninstaller, a Readme, an icon for High-End Loft Stuff, and one for University: each pack you've installed needs its own icon. They're all shortcuts to the locations of the actual contents of those packs, but having the shortcuts there allows the launcher to call the necessary data.
To create a shortcut for Ambitions, you need to go to where the contents of Ambitions are located and manually select Make Alias. This guide explains it perfectly, with pictures:

The second issue is that the content of Ambitions doesn't get copied over to where it needs to go. The newest pack you have installed (by the date EA released it, so that's University Life for you) runs the game in many ways, and it needs to be able to reference the data for the other packs. For most packs, the data is copied over (or rather, a shortcut is created that points back to the data) the first time you launch the game with that newest pack installed.
That doesn't happen for Ambitions. So you need to manually copy over the folder. This time, creating a shortcut doesn't work—I've tried it—so you'll need to copy and paste in the correct location. The video guide in this post is great: it shows you where to click, what to open, etc.
Once you have Ambitions installed and you apply the two workarounds, please test. If the game still works, you can install your other packs, and they should all work fine. The only other packs that need the same workarounds as Ambitions are Late Night, Fast Lane, and Outdoor Living, so keep this in mind if you ever buy any of those.

I would now like to install late night, do I follow the exact same work around as I did for ambitions? Thanks heaps, you have helped so much!

@jacindaham Yes, it's exactly the same workaround for Late Night, or rather two workarounds. I'm glad to hear it's working so far—having no serious complications is always a relief when installing Sims 3.
