The aging settings are applied individually by save. You need to set the aging options for the particular save. Are your aging settings in game options in your new saves, showing different from the aging settings in your old saves?

I'm not sure because I don't see aging settings in my default game settings, just in my MCCC settings which are the same for every playthrough. It may be different though if that's the case! I just need to find it.
Apparently auto-age has been turning off for all my new saves on its own. That solved my issue! Thanks <3
My young adult was able to age by blowing the candles on the cake. When she helped her toddler blow out the candles, nothing happened, other than the toddler being back on the floor
