I have all packs and kits and haven't considered disabling or uninstalling any of them.
I have one save (plus copies) and have been playing it for six years. I have 209 sims, 70 families. I only play 4 of those families, all related. The rest are background sims, and un-played relatives who still play a significant role in my gameplay. I have deleted most of the earlier premade sims but now I keep most of them.
I haven't noticed any lag with loading.
Six years is quite a long time, but you often seem to not play with a lot of families so your save will probably be fine.
Have you noticed longer loading times recently?
It takes me 39 seconds to go from EA App to main menu and 23 seconds to load a lot after selecting resume game. Sims move immediately after household loads. I usually play with autonomy off but turned it on to test.
This is very similar to how I play my game.
I don't experience lag or crashing in the game either. There's no reason for me to uninstall.
