I keep certain amount of evolved seeds in a trunk for future use. If I have two different qualities of produce my sims usually keep the best ones for seeds or cooking and sell the rest. Preserves are good if you have produce that you don't grow but want to keep. Plus you can make three meals for the price of one which is good when your sims have no money. And sometimes you can't find the right ingredient to buy for a recipe you want to cook. The remaining produce, if too much of it, gets sold, either straight out of their inventory or sometimes I like to take them to the farmer's market to sell their produce and then buy other things they need like flour or sugar. My sims also don't harvest every day or limit the amounts of plants they plant in their gardens which gives them more time for other activities.
For sure, I only ever have one of each type of plant. Maybe I should dig up the plants at the end of the season and plant new ones as needed. There are some plants I never grow (blackberries, for example) because they are not called for specifically in any recipe, and just opening a few herb seed packets will give me all the herbs I need.
