Is there really a Sims 5 coming out?

Aside from that one interview tho we can only speculate based on EAxis's inner remake of teams and stuff
I'm taking a guess to say that Sims 5 is in the last stages of pre-production and will start going into production this year

We'll get more official info in early 2022 with a release in early 2023
