It depends what grade you want your sim to get.
I had a sim do a uni course and continue his job, but I wasn't too fussed about his grade so long as he passed. I made sure to do any term papers, presentation boards and homework but sometimes would miss classes if he was at work. Other times he would have a vacation day from work and go to class. I think he was taking two classes at a time and I just got fed up with it in the end as it was going on too long so he quit his job, finished uni and then got a higher paid job.
