I don't own For Rent, HSY, GTW, DHD, Batuu and some stuff packs and kits, so I can do without them. I don't really want to uninstall anything that I own, but if I really had to start a new save...
I could probably say goodbye to Werewolves. I regret buying it at full price, though I do use it and have a couple of werewolves. I could also let go of Parenthood. It has some fun things, but the cas and bb are quite bad and I think I could do without it.
If I had to uninstall some eps I'd probably pick Growing Together (I enjoy the infant and toddler stuff, but I only got it last Christmas and haven't really explored all it has to offer yet, so it would be easy to say bye bye), Eco Lifestyle (I use some of the traits and bb, but don't really like the cas, world or gameplay), Cats & Dogs (the pets are lovely, but I don't have many of them and the cas, bb and world aren't my favourites) and maybe even Discover University (I love shower woohoo and cas and going to university is an experience I usually enjoy, but my sims don't go to uni very often). Phew. I'm surprised I could name so many. Most of the stuff packs and kits I could also let go if I really had to. And Outdoor Retreat, I love tents and stargazing, but I think that one could go too, because Snowy Escape has tents.

i'd like to use some of the traits and i like the b.b items (i use the dumpster the most) but that's just it, i do like you can take your items away though but that's just it
i don't like the world, gameplay or CAS that comes with Eco Lifestyle either
Oh yes the dumpster is great! I use it a lot too 😊 My favourite trait from EL is freegan
