Looks like you both have a common issue which may or may not involve mods/cc as a contributing factor.
Mods and custom content (CC) can be fun to use but unfortunately they cause unexpected results.
They need to be updated by the creators to continue to play nice with the game.
Testing on a vanilla (no mods/cc) folder is the best way to investigate causes of issues.
When adding/testing/deleting mods and/or cc it is important to delete the localthumbcache.package and any other cache files.

The issue with screenshots is rare but not an unheard off issue.
Screenshots are usually saved in a date/time format like 09-22-19_2-59-42 PM as an example.
You can try to search your computer to see if they are being saved elsewhere on your computer.
Cloud storage can also route any photo or screenshot to an external storage site.
I recently set up a new computer and OneDrive was automatically enabled.
At first I did not realize my Sims folder was automatically redirected to be saved on OneDrive.
After resetting the permissions everything is where is is supposed to be.
