I finished all quests in couple of hours, so that are the numbers which I remember.
Not completely sure about the Barney's Bowlarama and Try-N-Save, might have been 250, 350, or 450 Santa coins. Didn't paid much attention, but pretty sure about the rest of the numbers.
Barney

Be a Pin Monkey, 16h, 500 Cash, 125 XP

Dr. Hibbert

The Funzos (at least the one's for Santa Coins, but I guess also the blue one) are only walking decoration, same for the dog.
The Funzos shoot a little rocket when you tap on them, and the dog runs in circles.
About at the middle of all the holiday tasks (maybe earlier) Gil will appear and make you an offer:
Holiday Tree, Santa's Village, and a Reindeer for 200 Donuts.
So we need to obtain 4850 santa coins in 30 days. That comes out to about 162 santa coins per day.
I have a feeling that it's not going to be too difficult to achieve, especially once everyone gets their houses decorated. You'll be able to get 3 coins from each visit to a friend every day, plus all the ones from your own houses, etc.
Do the buildings no longer generate regular cash once they've been decorated?
Also, does anyone remember how many treats were needed to get all of the Halloween items? It seems Christmas has way more limited time content (although their holiday currency payouts seem to be higher). maybe they learned from Halloween (everyone finishing it in two weeks and then complaining about having to collect unnecessary holiday currency in place of money) and made it so we'd need to keep playing the whole month to get everything.

I wish I had been more patient to buy the Post Office...it was way too expensive when it came out...

Christmas Coins / Santa Coins
Probably? Since they are not "limited" like some of the Christmas ones are
Holiday Tree: 10 coins/10xp per 24 hours
Barney's Bowlarama: $105/11xp per 5 hrs. Adds Barney to your game.
Homer: Pretend to Ski 6 coins/90 xp per 10 hours
Ned: Take the boys snowmobiling: 6 coins/90 xp per 10 hours
etc.
Also you missed Santa's Sack: 5 donuts, earns 10 - 20 coins
Looking at the cost of these items, I'd say Santa's sack is a little pricey - 10 coins don't buy you much.

Hope that kinda helps!
