Wasn't it always shown at night in Homer the Great? And the splash screen is at night too. But Tapped Out gameplay is in the daytime.

Maybe they had some purple spotlights illuminating the building at the time. 8)

Great explanation! Colors are really hard to see at night. So a different color palette is used for effect. Same sort of thing happens for dream sequences.

They probably changed it because purple is a garish color for a building. Especially for a secret fraternal organization's temple. Especially if it's made of stone.

Edit: They did give us a purple day care center to quell the rubbing that has been the wrong way.

Maybe they did this because they plan on adding night mode. It could be the color it is now during the day and purple at night.
