The dates aren't fixed as such, since we're all in different parts of the world. I'm just heading towards Wednesday midnight and got the pig in the last hour - I also had a daily challenge today which earned me 1500 cuffs towards the total I needed. If you haven't completed them already already, the questlines for the event pay out currency when you complete them. There's also usually a little leeway for catching up. My update always used to happen about 24 hours into the event but it was almost always catchable.
Just checked, I'm ahead by one day. Still kinda feel like this event is harder than normally.
Early days buddy, once you start unlocking more characters and venues, levelling up performers and all that, it'll get easier.... It must do... I mean, just look at how many a day we have to do in Act 3....haha...
I haven't been maxing out friend visits or lawyer hunting and I'm just over 18000. I do drop lawyers in towns of very active neighbors and get the return on those.

This is a known issue right now. I haven't bothered buying it. I will wait until it is fixed.
