If sim gets interrupted while studying cures at the apothecary table, not only are they unable to resume, the table ceases to work. Theis happened 3 times in my game and the only fix was to go into bb mode, delete the table (the exchange was only $30) and rebuy a new one at full price.
Newly downloaded game, no mods, new save and new household. Can provide save files and video if requested.

Update: I’ve managed to fix the problem by replacing the Apothecary Table. Thanks for the help. ☺️

Was the study cures the only interaction that was missing ?
There is this issue: [EBN] Interrupting cures breaks Apothecary table | EA Forums - 12552504 that can happen if you travel while you create a cure but that breaks all the interactions.
Could it be the same ?
The same has happened to me every time I travel off my lot and come back, the apothecary table loses options. It only has Open and Buy Apothecary Ingredients as options. Going into buy mode to sell/replace works but only until I travel again.
Want to clarify — this is traveling without choosing to study cures before/during travel. Just regular traveling.
