Tennant left, was only allowed to have max £5 rent. I went and moved an item in build mode, this reset the value enough for me to fill at better rent rate. But then has defaulted back.

Im not sure if this is same problem, but this is what worked when I knew the rent price should have been updated after remodel but didn’t. Try moving someone in and then evict them right away. Make sure your rating is already pretty high so the negative effect from unjust eviction doesn't hurt you too badly. After eviction, the lease should update to the correct max rent price.
