It seems that the NVIDIA overlay was enabled even though I had disabled it. After disabling it seems the issue was resolved.

Have you had the chance to try starting up your PC in a Clean Boot before launching Apex Legends to see if that makes any difference at all? If there's something else running on the PC that might be causing these crashes that may help to get around it.
