I agree with Monkey. Whilst although it is always nice to imagine a game's immersion and realism, you have to also take into account how many resources they are already compacting into a game and making sure everyone's hardware can cope with its demands.
It doesn't mean they won't add these features, I remember the DLC for Battlefield 3 CQB where maps where close quarters and everything was destructible. However I do think at the moment there are more pressing issues with revives and respawns, map holes etc.
If you are comparing with Call of Duty, remember those lobbies are a lot smaller, no destruction and no dynamic maps - so they have more freedom with aesthetics. But even without the things you mentioned in your post, BF still retains the most immersion and realism from any FPS out there and that's down to its core fundamentals....and BF players themselves.
