Unfortunately, that YouTube link doesn't answer the specific question I wanted answered. I was able to talk to a friend that has played NHL for years. Basically all you need to do is to create a free Xbox account and sign in the second controller as that. You still need some sort of subscription on one of the accounts as far as I can tell. But now I can play father son versus father son online. Hopefully this helps somebody as well.
