For anybody else who was struggling with this, I found a solution: I went into my Xbox settings and found there was an optional console update they never alerted me to. Downloaded that, did a restart, and my game was back to the way it had been. (I also reset my internet router afterward, don't think that's what did it but leaving that here as well in case that was the actual fix).
