Actually, there was a chance to redeem the Santa Coins at the end of the event, and a similar chance with the hearts. However, in this case, they built it in from the start of the event with the 2000 Goo = 3 donuts thing.
I was referring the the left over. Not everyone had 0 coins when the event removed. So whether you had 49 (stockings were 50) or less, or forgot/didn't spend them, then they still disappeared. Same with the hearts, but it was easier to grind them all out, but still applies for those that forgot/didn't or somehow had an extra heart or two.
