Yeah, it's really unfair that media fighters like Jon Jones, Tony Ferguson or Khamzat Chimaev weren't added to the game. I dare to assume that EA has prepared separate quests to add these fighters to the game, like the quest with Conor McGregor. But unfortunately we will not find out exactly, at least not in the near future. Communication with the developer has been lost, the game has stopped updating. And the reasons for this we do not know.
