During most races in f1 world, whilst primarily using my custom car, the racing line graphic is overly conservative to how fast the car can actually go round the corner (red too early going in and when exiting). With regards to the Ai, again in f1 world primarily using my custom car, the other Ai drivers tend to pit after the first lap, and near enough every lap afterwards.

The exact same thing has been happening to me, the first race is fine but every race after that the racing line is bugging and the AI pits every lap. Its happened to me in f1 23 and now 24 as well. The only way to fix it is to restart the game. Another issue I've been having for the longest time is sometimes the game will open fine but if i reopen a few hours later everything is very laggy forcing me to restart my laptop to fix it. It's very frustrating to be having this problem with EA doing jack to fix it after so long especially given that these are paid games that aren't cheap. Fix it EA.
With regard to racing line.... it's just a guide to help learn the tracks. It's not even the fastest line.
