Do EA-play subscribers get early beta access? If so how do I claim it?

I’m not 100% sure, it depends if the upgrade is activated immediately I assume you would.
So if I upgrade now I'll still get access?
Only EA Play Pro will give you early access to the open beta.
EA Play Pro players will also receive early access to the Open Beta
