I have also noticed this Issue.
When you do Unlock the weapons, for now, you will have to check the Companion App to see how many kills you have.
Another option is to watch for the Progress Icon to stop popping up.
This is currently a bug in the game, and is being looked into.

The counters show no progress. and the guns i know i have done the requirements for are not unlocking. the game will not let me unlock them at all.
