As for the skins, you have two options available. In game, or in the BF1 companion. If you what to go true BF1 companion, go here: https://www.battlefield.com/companion/career , select BF1 career, select loadout in the menu and then choose your weapon etc.
After this, scroll down and any skins will be available under "Visuals". Just select it and choose one from the list and that is it. Note if you dont have any skins for that weapon you are changing, you will only have the default skin available sadly. You can get more skins from battlepacks that you get in game if you what more skins etc.
If you what to change it in game. In the menu, select "Customize" to access the customization menu that is next to squads. Select your weapon you wish to change and then press the cog wheel next to the weapon image. You will find all skins available for that weapon under "Visuals" at the bottom. To get more, get more battlepacks etc.
Be sure to save your setup when you go true the companion before you go in etc to make sure it updates as for in game, it is saved automatically once you apply it.
in game it doesnt say anything about skins next to the weapons

If you what to do it in game, you need to press the small cog wheel next to the weapon. Then below all other options under Visuals, you will locate the skin. If you dont have any for that weapon, then sadly you wont be able to select a skin. Once you earn some, they will be under Visuals etc.
