I can 100% understand that this is a very frustrating issue. However, I am afraid that we're unable to assist with any account-related issues, here via the forums. You have to reach out to the EA Live Support team for any account-related issues
Regarding restoring deleted EA account; the only way to do this is by resetting the password of the deleted account, so it becomes active again: https://help.ea.com/en/help/account/close-ea-account/. However, this is of course only possible when you have access to the original email of the EA account.
So in this case, I would recommend trying to get in touch with the provider of the inaccessible email account to see if they're able to activate it again, so you can try to restore your EA account.
Unfortunately due to security reasons, it's of course not possible to just removed account related info (like linked platform accounts) from an EA account, without verifying ownership of that EA account first.
