For aircraft with LMG, I would lay in wait with a 100/200 shot LMG on Sinai / Monte Grappa. There are always inexperienced pilots there.

It's a specific weapon though, with some very specific things like the fact you can F it all up if you launch your mortar to the side of a building or a structure. It's funny because the follow-camera in that case just follows the path of your mortar, but the mortar itself is stuck into a wall ...
The planes, I think I must have got them on Monte Grappa. If there's one map that can cause many kills from bomber planes, that is the one. I remember I always took the Lewis gun to try and get them. A trick that is explained on several places is: you can't damage a plane for 100% with a simple LMG, so you need either assistance (somebody doing the same), and if that is somebody on an AA-gun, that can help a lot. But you still need to be the one that deals the last bit of damage, and that is where you need luck.
I also remember some session on Soissons where you can hit bombers quite easily, because there is lots of elevation, but also a lot of cover. Maps that are entirely flat are the worst for plane take down.
