Summarized answers are:

P:  Pitch for your airplane, so the longitudinal direction of your nose (up, horizontal or down).  Units are degrees.  Positive for upwards.  Negative for downwards.

M:  Mach Speed of your airplane.  Which is using speed of sound as base unit.  aka M = 1.0 = 1,235 km/h.

Altitude = Your flying altitude above ground level in feet.

Speed = Your flying speed in kilometers/hour. (dont know if EA programmed this to be localized, so USA may have this in knots/h or mph?)
