So I tried reinstalling the game, after that I went into the test range and unbound every key under the flight control keyboard settings. I then went into the jet to make sure all the keys were unbound.
I found that if I rebound pitchdown to the space bar it would make me pitchup, so even though my controls are not inverted I can at least pitchup with the space bar now.
