Which platform are you on?  On console go to options, then audio and select your preferred language.  In North America on Xbox you have about roughly 7 languages to choose from, on PS3 you have English and Spanish, and on PC you have only the language that you downloaded your BF3 version from but I have read that it is possible to download language packs for the PC version.
