Yeah the EA team has really made so many fancy and an abundance of details available to us in the various game situations. And the HUD (Heads Up Display) for when flying the jets is no exception! :o)
So hereby some details to explain the various performance stats you see there:
Top left you see your airspeed in kilometers per hour (km/h. I am based on European continent, so maybe different if in other locations with your settings?).
Top right you see your flying height in feet.
Lower to the left, you have the P, M and G that you also ask about. They indicate:
P: Your Pitch of your airplane nose, in degrees up or down. So if you in your longitudinal direction are pointing up or down. 0 (zero) is horizontal. Watch out, as its hard to see the negative (minus) if flying through smoke/clouds/rain, etc...) But you have the other instruments to check on for this also, including your roll...
M: This is the Mach-speed indicator. So your speed in Mach value (1.0 being = the speed of sound).
G: The G-force indicator, so your total geforce extended on the vehicle and pilot.
